Who Is Master Jack

Master Jack is a roasting master working in the Shan Lin Xi region of Lugu County, Taiwan. In 2010, he won the Lu Gu Dong Ding competition — his entry judged the best among 5,523 samples submitted that year. After a win of that magnitude, a competitor cannot participate again; he becomes a judge instead. It remains one of the highest marks of recognition in the Taiwanese tea world.

His Process

Master Jack creates the GABA tea line we offer at Gaba Tea House. Every batch goes through his signature process — more than four days of alternating oxygen and anaerobic fermentation, adjusted by hand every few hours. The raw leaf is harvested in the protected Alishan reserve at roughly 1,600 metres, then processed without oxygen exposure using this specialised method.

  • GABA 777 — light, floral-fruity profile; a gentle entry point into the world of GABA tea
  • GABA 888 — an intensified version of 777, darker leaf, deeper fermentation
  • Black Jack — rich, berry-forward, with a pronounced tartness
  • Jackpot — a premium grade with toasted bread-crust notes and honeyed sweetness
