Bai Mu Dan (白牡丹) — White Peony Tea — is one of Fuding's most beloved white teas, crafted from one tender bud and two young leaves of the first spring harvest. Positioned between the delicate Silver Needle and the fuller-bodied Shou Mei/Gong Mei, White Peony combines floral brightness with a more layered, complex character — and ages beautifully over years of proper storage.
Origin & Character
Origin: Fuding, Fujian Province, China | Type: White Peony Tea (白牡丹 Bai Mu Dan)
Composition: One bud + two young leaves | Processing: Minimal — withering and sun-drying only
White Peony is named for its appearance — the open bud and two pale downy leaves resemble the petals of a white peony flower. Fuding Da Bai and Da Hao cultivars are typically used, producing teas of exceptional aroma and aging potential. A tea valued equally by those who enjoy fresh spring white teas and collectors who appreciate aged depth.
Tasting Notes
- Young: Light floral and sweet — melon, white flowers, honey.
