Shui Xian (水仙) — Water Immortal — is a venerated Wuyi rock oolong (Yancha 岩茶) from the mineral-rich cliffs of the Wu Mountains, Fujian Province. One of the most historically cultivated and significant Wuyi oolongs, it harmonises complex herbaceous and floral notes with the serene, centering quality that gives it its poetic name.

The Shui Xian cultivar produces large, thick leaves that develop exceptional depth through traditional Wuyi processing. Grown on rocky, mineral-rich cliffs, this tea carries the characteristic "yan yun" (rock rhyme 岩韵) — a mineral resonance unique to authentic Yancha. Every sip reveals layers: herbal clarity, floral lift, and a quietly serene depth.
