The Jin Xuan cultivar was developed in the 1980s by Taiwan's Tea Research and Extension Station and has become one of the island's most celebrated tea varietals. The tightly rolled small pellets unfurl beautifully in water, releasing a full-bodied, creamy infusion with a characteristic natural milkiness found nowhere else in the tea world.
